Seven Stills Immediately gets points for being a San Francisco Distillery. Their Motto “A Still for Every Hill"
This Whiskey is made from a smoked chocolate oatmeal stout. Upon first sniff it seams this whiskey is going to be heavy on the chocolate and oak. Aged in small unseasoned oak barrels you can definitely taste the wood. It develops into a sweater honey and dark chocolate notes with a hint of smoke. The middle is pretty messy and hard to figure out what exactly is going on until it develops into smoke. The finish hits with a nice peet smoke… a bit dry but nice. After a few sips you can settle right into this unique whiskey.
The occasion for this bottle you ask? Just after dinner around a campfire… with a cigar.
